I’m such a fan of dried cherries! I just adore them. They’re tart mingled with sweet AND bring a lovely tang to these Cherry, Pistachio, Chocolate Chunk Cookies Recipe. Oh, and then add in dark chocolate chunks and pistachios…your mind will not believe what your tastebuds are saying! SO amazing.
Cherry, Pistachio, Chocolate Chunk Cookies Recipe are a healthier-for-you cookie with the perfect combo of sweet, salty and a bit of tang! These Cookies are a healthier cookie and they make a lot so be sure to freeze some to have later too. They’ll keep great in a gallon freezer bag for up to a couple of months. I like to grab them to take hiking with me or when I’m running out the door to something and need a quick pick-me-up.

Ingredients in Cherry, Pistachio, Chocolate Chunk Cookies Recipe
- Oats- are among the healthiest grains on earth. They’re a gluten-free whole grain and a great source of important vitamins, minerals, fiber and antioxidants. Studies show that oats and oatmeal have many health benefits. These include weight loss, lower blood sugar levels and a reduced risk of heart disease. I prefer to use whole grain oats because they hold up better that quick oats for baking. Did you know that oats in any form help to lower bad cholesterol, are rich in antioxidants, and a great source of fiber!
- Whole Wheat Flour- naturally has the level of fiber found in wheat, while most of the fiber has been removed from white flour during processing. Fiber is an important part of your diet, as it prevents constipation, helps control blood sugar, wards off heart disease, and even assists in weight-loss management.
- Milled flaxseed- is also a great source of lignans, which are a powerful antioxidant that helps your body maintain a healthy blood cholesterol level, high in Omega 3 Fatty Acids, high in dietary fiber, helps reduce blood pressure, and improves cholesterol.
- Applesauce- Helps Promote Good Digestion. Due to a high concentration of pectin, applesauce aids in good digestion and helps remove waste from the body. They also contain polyphenols, which have antioxidant effects.
- Eggs- I place my eggs in a small bowl of very warm water while I’m gathering all the other ingredients and prepping to bake, then when I’m ready to add them into the batter they have reached the perfect temperature! Add your eggs one at a time and cream for 2 minutes, then scrape the bowl down using a rubber spatula, and add the next egg. This is the best way to be sure the eggs are incorporated evenly into the batter. Beating each egg individually is essential because eggs act as a leavener which brings the loft (height) into your baked goods.
- Dried Cherries- contain vitamin C, vitamin A, and vitamin E, all of which boost the immune system and help the body fight off illness.
- Pistachios- are a great source of healthy fats, fiber, protein, antioxidants, and various nutrients, including vitamin B6 and thiamine. Their health effects may include weight loss benefits, lower cholesterol and blood sugar, and improved gut, eye, and blood vessel health.
- Butter- Butter is rich in nutrients and beneficial compounds like butyrate and conjugated linoleic acid. High-fat dairy products like butter have been linked to a reduced risk of obesity, diabetes, and heart problems. Still, butter is high in calories and saturated fat and should be enjoyed in moderation.

How to make Cherry, Pistachio, Chocolate Chunk Cookies Recipe
Cherry, Pistachio, Chocolate Chunk Cookies Recipe will be put on the repeat list for sure! No one will ever guess they have only a 1/4 cup of butter in 70 cookies! Most of the moisture comes from the applesauce but you don’t have to tell anyone that 🙂 Let’s start!
- Preheat oven 350 degrees.
- Coat half sheet pan with cooking spray; set aside.
- In a large mixing bowl whip butter and sugar or agave; cream until smooth.
- Add eggs one at a time, scraping with each addition.
- Add vanilla; mix.
- In a large mixing bowl combine flour, flax seed, baking soda, and sea salt; whisk together.
- Add dry mixture and mix until 80% incorporated.
- Add oats in two batches mixing between each addition.
- Do not over mix.
- Add chocolate chunks, cherries, and pistachio pieces; stir to incorporate.
- Drop cookies onto prepared pan by the tablespoon or use a large cookie scoop.
- Add a sprinkle of sea salt to each dough ball before cooking.
- Bake at 350 for 12-15 min or until edges are crispy and lightly browned.
- Store in airtight container.
- Dough can be frozen for two months or last one week in the fridge.
- Baked cookies freeze well for up to 2 months.
- Makes approx. 70 cookies.

This week’s workout is all about getting the heart rate up while working on some strong sexy muscles. There are some days where I can totally fit in cardio and weights separately and there are days when I have to combine them or just pick one (I love them both…how can I choose?). On those days we combo it up. There are also days where I don’t feel like doing either one, combo days are great then too.


My wife just made these last night and they turned out great!
