How to store Chipotle Lime & Cheese Enchiladas Recipe

If you happen to have a few of these Chipotle Lime & Cheese Enchiladas leftover after dinner, just place them in an airtight container and pop them in the fridge.  

They’ll reheat wonderfully for lunch or dinner on another day! Just be sure to enjoy them within 5 days.

Fit Friday with Nichole!

Doing one thing differently is often the same as doing everything differently.
 
Living a healthy life is often built upon corner stone habits. What do I mean by this? Well, if I make it a habit to get up and workout in the morning a few other things are going to happen. I will get to bed earlier knowing that I have an early alarm and want to have energy for my workout. If I am going to get up I want yo be awake enough not die making stupid tired decisions. I won’t snack on lots of treats at night because I know I won’t sleep as well and because those treats may lead to an upset stomach in the morning. 

The cornerstone habit was working out in the morning, before you know it better sleeping and different nutrition habits are taking root in order to help me live a healthy life. 
I did one thing different and it lead to doing lots of things different. 
My point in saying this is to remind you, and myself, that we don’t need to get overwhelmed with making a lot of changes. Make one decision, one change, and watch what else falls into place. For instance, this weekend make the choice to grab a friend and head to the gym. Before you know it Saturday donuts become Saturday smoothies, or still Saturday donuts but you smile because you “earned” them. 
 
Let’s talk about that Saturday workout with your friend now. 
 
We are grabbing a weighted med ball and doing everything together. Enjoy! Push each other! And go get some coffee after!
 
Next week I am coming back to running stuff as promised last week. Watch for strength work next week.

Chipotle Lime Cheese Enchiladas Recipe

Today's Chipotle Lime Cheese Enchiladas Recipe are a cheesy delight with an incredibly tasty spin in the sauce!

Prep Time 20 minutes
Cook Time 30 minutes
Total Time 50 minutes

Ingredients

  • 2 (8 ounce) packages Shredded 4 Cheese Mexican, divided
  • 1 (28 ounce) enchilada sauce
  • 2-3 tablespoons diced chipotle chili peppers, according to taste
  • 1 tablespoon fresh squeezed lime juice
  • 10 count flour tortillas
  • desired toppings: diced tomato, avocado, chives, and lime wedges

Instructions

  1. Preheat oven to 350 degrees.
  2. Coat 9x13 glass baking dish with cooking spray; set aside.
  3. Combine enchilada sauce, diced chipotle chili peppers, and lime juice in a large mixing bowl.
  4. Place 1 1/2 cups Sargento® Fine Cut Shredded 4 Cheese Mexican in small bowl, using a cutting board to roll tortillas, dip each tortilla into enchilada mixture, place on board and sprinkle 2-3 tablespoons on cheese down the center of tortilla and roll.
  5. Place into prepared pan and repeat with remaining tortillas.
  6. Reserve remaining enchilada mixture for serving.
  7. Cover with foil and bake 20 minutes.
  8. Remove foil, sprinkle with 1 cup of cheese, and bake for 10 minutes or until lightly browned and bubbly.
  9. Serve warm with additional sauce and desired toppings.
