Blueberry Banana Oat Bread is a healthy breakfast or snack! Mmmm, hmmmm. Did you know that lightly dusting the blueberries with flour will help keep them suspended in the batter and not sink to the bottom of the bread?  It works fabulously.

Plus, I LOVE that there’s no oil in this recipe! The banana’s and applesauce are all the moisture this yummy little loaf needs!

How to make Blueberry Banana Oat Bread Recipe

  • Preheat oven to 350 degrees.
  • Spray loaf pan with cooking spray, set aside.
  • In a medium bowl, combine oats, flours, sugar, baking soda, salt; mix.
  • In a separate bowl; combine eggs, applesauce, and bananas; mix well.
  • Toss blueberries with 2 tablespoons reserved flour to lightly coat.
  • Make a well the in dry ingredients, pour in wet, and mix just until combined.
  • Add nuts and stir.
  • Add blueberries and gently mix in.
  • Pour into prepared pan.
  • Combine topping and sprinkle on top of batter.
  • Bake 50-60 minutes, checking for inserted toothpick to remove clean.
  • Let cool 10 minutes, turn out on rack to finish cooling.

Helpful baking tips for higher elevations:

  • If you live 3,000 feet above sea level or more it is considered high elevation and may take longer to cook/bake. 
  • Adjustments are needed for 5000+ feet and above:
  • Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
  • Reduce sugar: for each cup, decrease 2 tablespoons.
  • Increase liquid: for each cup, add 2 to 4 tablespoons.
  • Increase oven temperature by 25 degrees F.
  • Check if it is done a little early.
  • This takes some trial and error to get it right for you.

Ingredients

  • 1 cup whole oats
  • 1 cup whole wheat flour, 2 Tbsp reserved
  • 1/2 cup all purpose flour
  • 2/3 cup brown sugar
  • 2 teaspoons baking soda
  • 1/2 teaspoon sea salt
  • 2 eggs, room temperature
  • 1/2 cup applesauce
  • 2 overripe bananas
  • 1 cup fresh blueberries
  • 1/2 cup pecans, chopped
  • topping:
  • 1/4 cup oats
  • 1/4 cup brown sugar

I like to plug recipes into this site for an approximate on nutritional information… https://www.caloriecount.com/cc/recipe_analysis.php When I put it in… It looks like if you get 10 slices in a loaf it’s 116 calories per slice.
