You’ve heard of twice baked potatoes??? Well… this recipe is twice baked red mashed potatoes and it’s just perfect for a spin off the regular ole’ turkey day mashed potatoes. We had a “mock” Thanksgiving dinner last weekend. Many of you may already know we’re a step-family so this year we won’t have our kids on Thanksgiving 🙁 We try to celebrate with them somehow, sometimes we just have to do another meal early! My friend, Kate, told me how she makes these mashed potatoes, we gave them a try… They were a HIT!! If you feel like trying something new for Thanksgiving… you won’t be disappointed! (they’d be great any other time too)
Twice Baked Red Mashed Potatoes
8 C diced red potatoes
1 C shredded cheddar cheese, divided
1 (4oz) tub of chive and onion cream cheese
7-8 strips of bacon, crumbled
Salt and pepper to taste
Boil potatoes until tender, drain. Mash potatoes, add remaining ingredients, top with remaining 1/2 C cheese. Bake at 350 degrees for 20 minutes. Serve.

Add cream cheese and shredded cheese |
Add bacon |
