Y’all are going to LOVE this recipe! Â It uses up 2 1/2 cups of that zucchini that’s starting to grow of control out in the garden AND it tastes AH-mazing! Â Oh my.
Look at those stinking adorable loaf pans from IKEA!  You know you love them 🙂  Last week I attended the IKEA blogger catalog launch and got those adorable loaf pans.
SO, naturally I ran right home to bake in them… Honey Raisin Zucchini Bread and Ikea Event !

I fell completely in love with Ikea’s new lines and aren’t these living room and kitchen displays the cutest ever! Â Oh my gosh… you gotta go check them out.
I could hardly stop eating that batter… you guys!  It’s delish 🙂
AND take a look at those IKEA pans- aren’t they absolutley adorable! Â I totally {heart} them.
Honey Raisin Zucchini Bread and Ikea Event

Ingredients
- 3 C flour
- 1 Tbsp baking powder
- 1 1/2 tsp cinnamon
- 1 tsp sea salt
- 2 eggs, or 1 whole and 2 egg whites to reduce fat/cholesterol
- 1 C sugar
- 1/2 C honey
- 1/2 C canola oil
- 1/2 C fat free greek yogurt
- 2 tsp vanilla
- 2 1/2 C finely shredded zucchini, unpeeled
- 1/2 C walnuts, chopped
- 1 C golden raisins, soaked covered in warm water to soften, if needed
- 1/2 C crunchy granola, I used nature valley protein crunchy granola
Instructions
- Preheat oven to 325 degrees.
- Coat 2 loaf pans with cooking spray; set aside.
- In large bowl combine flour, baking powder, cinnamon, salt; stir.
- In a seperate bowl whisk together eggs, sugar, honey, oil, yogurt, vanilla, and zucchini; mixing well.
- Make a well in dry ingredients, add wet, mix to 80% incorporated, add walnuts and raisins, stir.
- Divide batter into prepared pans, sprinkle each pan with 1/4 C granola.
- Bake 60-70 minuted until toothpick inserted into center removes clean.
- Cool for 10 minutes on cooling rack, remove loaves from pans, complete cooling on rack.
- Slice and Enjoy!
- * if you'd like to use only honey in this recipe- omit sugar and use 1 C honey and increase flour by 1/4 C cup.
