Breakfast Pie

I’m so excited to introduce you all to Heather from Heathers French Press, she’s a member of our Creative Team and this is her first time sharing with us!  I’ve loved getting to know her a little better through her blog 🙂

Breakfast is my family’s favorite meal.

During the week I like to keep it pretty simple because we’re all rushing to get out the door on time.

The weekends are different.

I’m definitely NOT what you would call a  morning person,

but I LOVE making breakfast.

Because this week Charlie’s math class is celebrating Pi day,

I thought it might be fun to have pie for breakfast.

Not the dessert variety;

although, Stella and I have been know to eat berry pie for breakfast.

This is a breakfast pie,

and the best part is that you can add almost anything.

I added a few leftover bell pepper strips, onion, ham, and cheese,

but the possibilities are endless.

{It’s a great way to clean out that veggie bin}

Yield: 8

Breakfast Pie

Breakfast Pie
Prep Time 20 minutes
Cook Time 30 minutes
Total Time 50 minutes

Ingredients

  • 1- 9 inch pie crust {I use Trader Joe's variety, but you can use your favorite recipe}
  • 8 eggs
  • 1/2 cup of sliced bell peppers and onions
  • 4 slices of ham diced
  • 1/4 cup of shredded cheese {I used cheddar}
  • salt and pepper to taste

Instructions

  1. preheat the oven to 350
  2. saute the peppers and onion until they become soft
  3. roll out the pie crust and place in the bottom of a lightly greased pie pan
  4. add the sauteed veggies, diced ham, and cheese
  5. whisk the eggs and season with salt and pepper
  6. pour over the filling
  7. bake for 25 - 30 minutes until the crust begins to brown and the eggs are set in the middle

 

While I don’t enjoy losing an hour of sleep, this was worth getting up for:)

I’m super happy that Heather is on our Creative Team and totally look forward to hearing from her again next month.

  1. This past Saturday we had our monthly mens prayer breakfast and I was in charge of breakfast. I had seen this posted on Pinterest and thought it looked great so I made it for the guys. It was a huge hit!!!! Thanks! Wish I could post the picture I took of it.
