My Aunt Lynne, Uncle Scott, and family were in town last weekend. We hosted a little get together…. they live in Pennsylvania so we don’t get to see them much. It’s always fun to visit and catch up with family. Aunt Lynne is hilarious she kept us laughing the entire evening! We made Teriyaki Grilled Chicken, Zucchini Spears, the Artisan bread, and salads. Banana Fosters for dessert, which brought out claps and cheers! Overall it was a very enjoyable evening and so fun to see them!
FYI…The little poop-looking things are purple potato fingerlings
Teriyaki Grilled Chicken
In small mixing bowl combine:
1 C Soy Sauce
3/4 C brown sugar
1 C water
1 chicken bouillon
3 garlic cloves, minced
4 tsp ginger- dry
1/4 C sesame seeds
2 Tbls sesame oil
20 chicken tenders or 10 chicken breasts
Place in a container or ziplock bag. Marinade 4-5 hours, refrigerate
Grill
Mix in small bowl
Pour over chicken
Ready for the fridge
Grilled Zucchini Spears (just made that up on the fly!)
5 small zucchini
1/4 C olive oil- drizzled
2 tsp garlic powder
2 tsp onion salt
Sea salt and pepper
Cut the zucchini into 1/4 inch long spears, lay on a prepping plate. Drizzle olive oil back and forth over zucchini, sprinkle evenly the remaining ingredients. Grill along side any main dish meat, turn every few minutes to cook evenly.
Zucchini Spears (we used golden and green)
Drizzle with olive oil, sprinkle with spices
Grill Zucchini with Teriyaki Chicken and purple potatoes
Grilling
Dinner is Served!
These recipes are easy and delicious, if you can get help with the grilling… it’s that much easier!!

This sounds so good! Thanks for the recipe, Ruth! Growing up, we would cut up zucchini and marinate them in italian dressing. we would then grill them and sprinkle parmesan cheese on top after we flipped them back over. Grill until the cheese has melted. Yum! – Stina
