Souper yummy Italian Stew

This is a perfect autumn soup… it uses some garden veggies and that’s a plus around our house 🙂  My family ate the entire pot in one sitting! It’s THAT good! Next time I’ll be making a double batch… I like left overs for lunch!  

Italian Stew

In a large stock pot combine and brown:
1 pound bulk Italian sausage (if you can find Italian turkey sausage, it’s even healthier)
1 small onion, chopped
2 cloves garlic, minced

Drain off grease and add:
6 cups of water
5 beef bouillon cubes (or 6 cups beef broth to replace water and bouillon)
1 can stewed tomatoes or 2 cups chopped tomatoes
1 8oz can tomato sauce
2 carrots, sliced
2 tsp dried basil (or a 1/2 C fresh, sliced)
2 tsp dried oregano
Reduce heat and simmer, uncovered, 30 minutes

Add:
1- 9oz package of cheese tortellini
1 small zuchini, sliced
1 green pepper , chopped
2 Tbls fresh mined parsley
Cover and simmer 20-25 minutes or until tortellini is done, Serve with Parmesan Cheese if desired.

Ingredients
Brown sausage, onions, garlic.  Drain
Add carrots, tomatoes, tom sauce, spices, water, boullions. Simmer 30 min uncovered
Add tortellini, zucchini, peppers. Cover and simmer 20 min
Serve when tortellini is done!

Perfect soup for a rainy day… filling and delicious…  It’s SOUPER delicious 😉
