Kate’s (amazing) Corn Bread

Women need other women … besides what man wants to listen to all we have to say???  I’m part of a bowling league of women.  We have such a fun time… not because I’m the best bowler around (far from it) but because once a week we get to visit, eat chips and salsa, drink a Dr. Pepper, and bowl!  I consider myself very consistent at being inconsistent when comes to bowling!! Last week I had to wear the “BOOBIE” bracelet for having the lowest score from the previous week… guess it’s the boobie prize!

My bowling friend Kate has this amazing corn bread recipe… it’s SO good!  I added the blueberries because it’s just a thing I’ve done for the past several years and we love them in our cornbread.   Try it out maybe you’ll love it too??


Kate’s AMAZING Corn Bread!!



Kate’s (amazing) Corn Bread

Preheat oven 350 degrees.  Cooking spray a 8″ pan, set aside.

In a mixing bowl beat 2 minutes:
1/2 C butter- softened
2/3 C sugar
Add and mix till light in color (3-4 minutes):
2 eggs (I did one whole and one egg white)

Alternate dry ingredients with buttermilk, mixing each time:
1 C cornmeal
1 C flour
1/2 tsp soda
1/2 tsp salt
1C buttermilk

Bake 350 degrees 30-40 minutes until center bounces back with a light touch and lightly browned

1 C blueberries– YUM!
Cream the butter and sugar 2 minutes
Creamed
Add dry ingredients stir blueberries in by hand
Pour batter into sprayed pan
Bake 350 degrees for 30-40 minutes

Danelle said that her mom use to grate fresh corn into corn bread!  (I’ve also added in 1/2 a cup of canned white corn tidbits) I am dying to try this, I love corn kernels in there. This moist corn bread goes super well with any chili or soup… Give the Blueberries a try!! (and maybe try a bowling league… it’s a lot more fun than I thought it’d be 🙂
