Baked Zucchini Fries and dipping sauce

Here’s another idea for zucchini, you won’t believe how good this Baked Zucchini Fries recipe is …  we all need a good zucchini recipe for whenever it’s in season no matter where you live!  I know, I know this sounds kinda gross… BUT, trust me!  It’s actually very good 🙂

Baked Zucchini Fries and Dipping Sauce
 
 

Baked Zucchini Fries

 
2 egg whites- whipped till frothy
 
Combine in small bowl:
1/2 C bread crumbs
2 T parmesan cheese (grated or powdered)
1/4 tsp dry basil
1/4 tsp oregano
1/4 tsp garlic powder
Salt and pepper
 
3 med zucchini- sliced in strips, like fries
 
Dip zucchini in egg whites, then dry mixture, and place on a sprayed cookie sheet
Bake 425 degrees for 20 minutes
Serve these HOT out of the oven and they’re not good the next day… so eat ’em up!

Set side by side on sprayed cookie sheet

Bake 425 degrees 20 minutes

Simple Dipping Sauce

4 Tbls BBQ sauce (your fav or whatever you have in the fridge)
1 Tbls lowfat mayo

Mix until smooth. Serve and Dip!
