I can’t tell you how much I love caramel!! My favorite candy is Sugar Babies. (want to try a killer combo? Mix Sugar Babies with lightly buttered air popped popcorn! So good 🙂 Usually when I eat out at a restaurant, I am too full to have dessert. On one occasion I was finagled into sharing a Banana Fosters, I was totally hooked! This dish is usually prepared at higher end restaurants… seriously though at $12.00- $15.00 a serving, I figured I’d better learn out how to make it! I began inspecting the waiters every move, asked a couple questions and over a couple of restaurant visits, I’d figured it out! My kids love to watch me make this… I’m sure it has something to do with the whole “lighting it on fire” thing 🙂
Banana Fosters
1 half gallon of high quality vanilla ice cream (they are not all equal, we love Costco’s but Dreyers works too) Dish the ice cream into bowls before making the sauce.
Use a heavy bottomed frying pan, on the stove over medium high, using a long wooden spoon combine the following:
Melt:
1 cube of butter
Add:
1 1/2 C brown sugar–stir till a paste
Add:
1 Tbls milk– stir till smooth
Add and stir in:
6 ripe bananas– peeled, broke into thirds, push your finger down the middle of each section to separate into 3 sections
Add:
2 Tbls Bacardi Rum (it definitely burns off)
Use a long nose lighter or a grill lighter, touch the flame close to the mixture and it will light on fire!
Stir continuously till flame goes out. (I have never burned myself… knock on wood!)
Banana sections
Melt butter
Medium High Heat
Add brown sugar
Stirring
till a paste
Add milk
Mix till smooth
Add sectioned bananas
Stir
Add Bacardi Rum
Flambe`
Stir
Caramelized
Banana Fosters
Serve over already dished bowls of ice cream
