  • 4 slices sourdough bread toasted
  • 1/2 cup prepared hummus
  • 4 slices turkey bacon cooked and crumbled
  • 2 tomatoes sliced
  • 2 cups spinach tossed with olive oil salt/pepper
  • 4 eggs cooked to desired doneness
  • 1 cup feta cheese crumbled
  • 1 teaspoon red pepper flakes
  • 1/4 cup chives to garnish
  • sea salt and pepper to taste


  • Place each toast on a serving plate, top with hummus slices, sliced tomato, tossed spinach, an egg, 1/4 cup feta cheese, 1/4 teaspoon red pepper flakes, and chives.
