International Pancake Tuesday is February 17, 2015 and there's no better way to get the celebration started than with Homemade Blueberry Pancakes with Nutella®!

Ingredients
2 cups unbleached all purpose flour
4 teaspoons baking powder
1 teaspoon sea salt
3 tablespoons sugar
1 1/2 cups unsweetened coconut milk
1 cups fat free greek yogurt
2 eggs
1 teaspoons vanilla
1 cup fresh blueberries
1 cup pure maple syrup, for serving
1 cup fresh blueberries and raw sugar, to garnish
1 cup Nutella®
Instructions
In a large mixing bowl combine flour, baking powder, salt, sugar; mix to combine.
In additional small mixing bowl combine coconut milk, greek yogurt, eggs, and vanilla; whisk to combine.
Make a well in center of dry mixture, add wet; mix until just incorporated- do not over mix.
(small lumps are expected)
Coat griddle with cooking spray, place griddle over medium heat, once pan is hot add 1/3 C batter per pancake, when small bubbles appear flip to cook other side.
Remove from heat and repeat for additional pancakes.
Serve with Nutella®, pure maple syrup, fresh blueberries, and raw sugar to garnish.
