Cherry Cheesecake Cookies

Ingredients

  • 1/2 C butter, softened
  • 1 3oz package cream cheese
  • 1 egg, separated
  • 1 tsp vanilla
  • 1 tso lemon zest
  • 1/4 tsp salt
  • 1 C powdered sugar
  • 1 C flour
  • 1 C graham crackers, crushed (approx 5 sheets)
  • 1 20oz can cherry pie filling

Instructions

  1. In medium bowl cream together butter, cream cheese, egg yolk, vanilla, lemon zest, and salt until light and fluffy.
  2. Gradually mix in powdered sugar and then flour to make stiff dough.
  3. Cover with plastic wrap and place in refrigerator to chill about 2 hours.
  4. Preheat oven 325 degrees.
  5. Remove dough, shape into 1 inch round balls.
  6. In shallow bowl beat egg white until foamy.
  7. Place graham crackers in shallow bowl.
  8. Dip balls into egg whites and then roll in graham crackers.
  9. Arrange on ungreased cookies sheet about 2 inches apart.
  10. Using your thumb, make a depression in the middle of each cookie.
  11. Bake 12-15 minutes until cookies begin to brown on the bottoms.
  12. Remove cookies from baking sheet and let cool.
  13. Fill depression with 1 tsp cherry pie filling.
  14. Enjoy!
