Swedish Meatballs
Swish MeatballsĀ are a hearty dinner that everyone always loves!

Ingredients
3/4 cup panko bread crumbs
1 medium onion, chopped
2 eggs, lightly beaten (or 1 whole egg, 2 egg whites to lower fat/cholesterol)
1/3 cup fresh parsley, minced
1 teaspoon pepper
3/4 teaspoon sea salt
2 pounds 90% lean ground beef
Gravy:
1/2 cup all purpose flour
2 3/4 cups 1% milk
2 10 1/2 ounces condensed beef consomme, undiluted
1 tablespoon worcestershire sauce
1 teaspoon pepper
3/4 teaspoon sea salt
1 package whole grain egg noodles
Instructions
In a large bowl, combine first six ingredients.
Add beef; mix until combined.
Shape into 1 1/2 inch meatballs (about 36).
In a large skillet, brown meatballs in batches.
Using a slotted spoon remove to paper towels to drain.
Gravy:
Stir flour into drippings; cook until light brown.
Gradually whisk in milk until smooth.
Stir in consomme, worcestershire, pepper, and salt.
Bring to boil; cook and stir for 2 minutes until thickened.
Return meatballs to pan.
Cook uncovered for 15-20 minutes longer or until meatballs are cook through, stirring occasionally.
Meanwhile; cook noodles according to package directions.
Serve over meatballs and gravy.
