Hi everyone! I'm back again this month with a delicious cookie recipe that you'll want to add to your recipe box.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine, softened
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup butterscotch chips
  • 1/2 cup quick cooking oats
  • 1/2 cup crispy rice cereal
  • 1/2 cup flaked coconut
  • 1/2 cup slivered almonds

Instructions

  1. Preheat oven to 350 F. Line two cookie sheets with parchment paper and set aside.
  2. In a small bowl, combine flour, baking soda and salt. Set aside.
  3. Using a stand mixer with the paddle attachment, add butter, oil, both sugars, egg and vanilla. Blend on medium speed until mixture is creamy.
  4. Remove bowl from mixer and stir in butterscotch chips, oats, cereal, coconut and almonds.
  5. Using a cookie scoop, place dough about 2-3 inches apart on prepared cookie sheets.
  6. Bake for 12-14 minutes or until edges are golden brown.
  7. Remove from oven and let cool on wire racks.
  8. Enjoy!
