Margarita Macaroons

I'm back this month with something a little tropical because as you're reading this I'm on a Caribbean cruise with my family! I just might have a margarita on my cruise and I thought I'd share some of these Margarita Macaroons with you to get you in to mood for warmer weather and sunny skies!

Total Time 40 minutes

Ingredients

  • 2/3 cup sweetened condensed milk
  • 1 tablespoon fresh lime juice
  • 1 tablespoon tequila
  • 1 teaspoon fresh lime zest, about 1 lime
  • 1 large egg white
  • 1 & 1/2 teaspoon. vanilla
  • 1/4 teaspoon salt
  • 3 & 1/2 cups sweetened flaked coconut
  • Salt for sprinkling on top, optional

Instructions

  1. Directions:
  2. Preheat oven to 350 F.
  3. Prepare two cookie sheets with parchment paper and set aside.
  4. In a medium size bowl, whisk together sweetened condensed milk, lime juice, tequila, lime zest, egg white, vanilla, and salt.
  5. Stir in coconut until well combined.
  6. Using a small cookie scoop, scoop out mixture and place about 2 inches apart on prepared cookie sheets.
  7. Bake for 20 minutes or until lightly golden brown on top.
  8. Remove from oven and sprinkle with salt (optional). Let cool completely.
  9. Enjoy!
