Ingredients
1 teaspoon butter
2 tablespoon onion, small diced
2 tablespoon green pepper, small diced
2 eggs
2 tablespoon milk
1/4 sliced fresh spinach leaves
1 slice bacon, cooked and crumbled
2 tablespoons shredded cheddar cheese
1/4 tomatoes, small diced
Instructions
Coat medium fry-pan with cooking spray.
Over medium high heat, melt butter, add onions, and peppers; cook 2 minutes until tender.
In a small bowl combine eggs and milk, whisk, pour eggs into pan on top of onions and peppers.
Cook 1-2 minutes until set and flip.
Add bacon, tomatoes, spinach, and cheese; cook an additional minute.
Fold in half.
Repeat for additional omelettes.
