Ingredients

  • 1 teaspoon butter
  • 2 tablespoon onion, small diced
  • 2 tablespoon green pepper, small diced
  • 2 eggs
  • 2 tablespoon milk
  • 1/4 sliced fresh spinach leaves
  • 1 slice bacon, cooked and crumbled
  • 2 tablespoons shredded cheddar cheese
  • 1/4 tomatoes, small diced

Instructions

  1. Coat medium fry-pan with cooking spray.
  2. Over medium high heat, melt butter, add onions, and peppers; cook 2 minutes until tender.
  3. In a small bowl combine eggs and milk, whisk, pour eggs into pan on top of onions and peppers.
  4. Cook 1-2 minutes until set and flip.
  5. Add bacon, tomatoes, spinach, and cheese; cook an additional minute.
  6. Fold in half.
  7. Repeat for additional omelettes.
