Father's Day Crunchy French Toast

Ingredients

  • 1 loaf of french bread
  • 3 eggs
  • 1 1/2 C lowfat milk
  • 2 C corn flakes, crushed
  • cinnamon

Instructions

  1. Slice french bread on an angle, 1 inch thick.
  2. In a flat bottom dish beat eggs, add milk, beat well.
  3. In a freezer ziplock baggie, pour in corn flakes, seal top removing as much air as possible.
  4. With the back of a large spoon, crush corn flakes until small pieces, pour onto a plate.
  5. Warm cooking sprayed griddle to medium heat.
  6. Dip 1 slice of french bread into egg mixture, then lightly press each side on crushed corn flakes.
  7. Repeat with additional slices.
  8. Place on griddle, cook each side 2-3 minutes or until lightly browned and center is fully cooked. (make sure it's not mushy, it takes a bit longer than normal french toast due to coating)
  9. Serve with fresh berries or bananas and pure maple syrup!
