Black Bean Hummus Wrap...

Black Bean Hummus Wrap is a spin off of a super yummy dish I "DEVOURED" on our recent vacation to Mexico! (several times, actually... I really loved it!)

Prep Time 20 minutes
Cook Time 5 minutes
Total Time 25 minutes

Ingredients

  • 1 yellow pepper, thinly sliced
  • 1 red pepper, thinly sliced
  • 1/2 onion, thinly sliced
  • 1 cup black beans, drained and rinsed
  • 1 cup humus
  • 1/2 fresh lime, squeezed
  • 4-6 whole wheat tortillas

Instructions

  1. In a small mixing bowl mash beans, add humus, mix well.
  2. Add squeezed lime juice, mix.
  3. Set aside.
  4. In a large fry pan sprayed with cooking spray, add onion and peppers.
  5. Cook over medium heat covered for 1 minute.
  6. Stir, cover, cook 1 additional minute.
  7. Repeat until veggies begin to soften, and start to brown.
  8. Warm tortillas.
  9. Spread 2 Tbsp black bean hummus on each tortilla.
  10. Divide veggies between tortillas.
  11. Fold in half and roll.
  12. Serve.
