Ingredients in Green Chili Black Beans Recipe

• Black Beans- The antioxidants, fiber, protein, and carbohydrates in black beans make them nutritionally powerful. A diet rich in beans can reduce your risk of several serious medical conditions and help your body to process calories more effectively.

Green Chilies- Their vibrant color signals high amounts of the antioxidant beta-carotene, which supports the cardiovascular system, as well as helps maintain the health of the skin, eyes and immune system. Green chilies also contain vitamins B and E, and are a good source of iron and potassium.

• Onions- Onions not only provide flavor, they also provide important nutrients and health-promoting phytochemicals. High in vitamin C, onions are a good source of dietary fiber, and folic acid. They also contain calcium, iron, and have a high protein quality (ratio of mg amino acid/gram protein).

• Garlic- Garlic fights all types of infections—fungal, bacterial, parasitic, and viral—regulates blood sugar, lowers blood pressure, and lowers cholesterol, used widely as a flavoring in cooking, but it has also been used as a medicine throughout ancient and modern history.

Cumin- as a spice increases antioxidant intake, promotes digestion, provides iron, may improve blood sugar control and may reduce food-borne illnesses. Taking higher doses in supplement form has been linked to weight loss and improved blood cholesterol.

How to make Green Chili Black Beans Recipe

  • In a stock pot, over medium high heat melt butter and add onions; cook stirring 3-4 minutes or until lightly caramelized.
  • Add garlic, cook 2 minutes, stirring.
  • Add black beans and diced green chilis, cumin, red pepper flakes, and sea salt; mix.
  • Bring to boil, cover, and reduce to simmer.
  • Slowly simmer for 25 minutes allowing flavors to meld.

• Green Chili Black Beans are a tasty way to serve up any kind of canned bean~ it works great with most varieties.  

• These Green Chili Black Beans will keep just fine in the fridge for up to one week. 

• It’s nice to have them in there, actually.  We like to make them into bean and cheese burritos or just top them with shredded cheddar cheese and then dig in with a bag of tortilla chips 🙂

Fit Friday with Nichole!

Spring Break is in full force at my house. I love spring break because it is my summer break trial run. I am reminded that I need to figure out lunch options in my house. I need to gear up all of us for chores and cleaning up the tornado damage as it happens. I also need to plan my workouts in the morning, squeezing them in “some time during the day” isn’t going to work.

We are pulling out the jump ropes this weekend for some fun. I love the jump rope for a couple of reasons; because it always get my heart rate up and going and I know I can do it because I did it as a kid all the time.

  • 1/2 red onion, small diced
  • 1 clove garlic, minced
  • 1 1/2 tablespoons butter
  • 2 (15ounce) cans black beans with juice
  • 1 (7ounce) can diced green chilis, drained
  • 1/2 teaspoon cumin
  • 1/4 teaspoon red pepper flakes
  • sea salt to taste

Instructions
