They’re perfect for spring time with that little hint of delicious lemon flavor mingled into each delicately moist sugar cookie bite! Oh my. Heavenly! Aren’t those little flower sprinkles the cutest things EVER?!?!?

I found them at a local craft supply store in town. There are a lot of fun spring varieties of sprinkles available so feel free to use whatever you happen to find if you want to dress them up. Or eat them just as they are too! 🙂

How to make Lemon Sugar Cookie Bars Recipes

  • Preheat oven 350 degrees.
  • Coat half sheet pan with cooking spray; set aside.
  • In a mixing bowl combine flour, baking soda, baking powder, and sea salt; whisk to combine.
  • In a separate mixing bowl cream butter and cream cheese.
  • Add sugar and cream 2-3 minutes until light and fluffy.
  • Add egg and mix well and scrape bowl.
  • Add lemon juice and lemon zest; mix.
  • Add dry ingredients all at once and mix just until combined.
  • Bake 20-22 minutes until edges are very lightly browned (do not over cook)
  • Cool on cooling rack.
  • Lemon Cream Cheese Frosting:
  • In mixing bowl cream butter and cream cheese.
  • Add powdered sugar 1 cup at a time, mixing with each addition.
  • Add lemon juice and lemon zest.
  • Evenly spread frosting over cooled bars.
  • Add spring sprinkles if desired.

Helpful baking tips for higher elevations:

  • If you live 3,000 feet above sea level or more it is considered high elevation and may take longer to cook/bake. 
  • Adjustments are needed for 5000+ feet and above:
  • Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
  • Reduce sugar: for each cup, decrease 2 tablespoons.
  • Increase liquid: for each cup, add 2 to 4 tablespoons.
  • Increase oven temperature by 25 degrees F.
  • Check if it is done a little early.
  • This takes some trial and error to get it right for you.

  • 2 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 1/2 cups sugar
  • 1/2 cup butter, softened
  • 4 oz neufatchel cream cheese
  • 1 egg, room temperature
  • 1 teaspoon vanilla
  • 2 tablespoons lemon zest, approx 2 lemons
  • 2 tablespoons fresh lemon juice
  • Lemon Cream Cheese Frosting:
  • 1/2 cup butter, softened
  • 4 oz neufatchel cream cheese, room temperature
  • 4 cups powdered sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • spring sprinkles, for garnish

    Does this frosting set up when cooled? I’m wondering about being able to stack them in a box. Thanks for the great recipe!

      Yes, the frosting will set to firm on the top if allowed to air off for about an hour or so… then I think they would work fine to stack. I also sometimes layer with wax paper between to prevent sticking. I hope you love them as much as we do!! xoxo~ Ruthie
