I love a good crock-pot dish… AND this Pulled Ginger-Chicken Slider with Cilantro Slaw is fabulously good!!  This is the BEST pulled chicken recipe ever… then add the slaw and the mini little bun and the name ‘Slider’ AND you’ve got a Super Bowl Party!

I love Garden Gourmet Herbs- they’re just like fresh herbs right out of the garden but in handy little tubes that last for months in the fridge!  The BEST of both worlds, I’m telling ya!!

I love a good crock-pot dish... AND this Pulled Ginger-Chicken Slider with Cilantro Slaw is fabulously good!

Cook Time 6 hours
Total Time 6 hours 10 minutes

Ingredients

  • 1 pounds skinless chicken breasts, approx 4
  • 1 small onion, chopped
  • 2 tablespoons Gourmet Gardens ginger
  • 1 tablespoon Gourmet Garden Garlic
  • 1 cup ketchup
  • 2 tablespoons dark brown sugar
  • 1/4 cup lime juice, divided
  • 2 tablespoons olive oil
  • 1 tablespoon Gourmet Garden Cilantro
  • 2 cups shredded red cabbage
  • 1/2 cup finely sliced red onion
  • 16 whole wheat slider buns

Instructions

  1. Add first seven ingredients and 2 Tbsp lime juice to the slow cooker, cover and cook on high for 3 hours or low on 6 hours.
  2. When chicken is done, remove from sauce, shred, and return to sauce.
  3. Keep warm.
  4. Meanwhile combine 2 Tbsp lime juice, olive oil, and Gourmet Garden Cilantro in a medium bowl.
  5. Toss with red cabbage and onion.
  6. Divided chicken and red cabbage among 16 whole wheat slider buns.
  7. Serve.

    Could I use fresh garlic and fresh ginger? And if so, in what proportion to dried?

      Yes, you totally could use fresh. I would use 2-3 tablespoons cilantro- depending on how much you like the flavor. On the ginger I would use the same amount, the ginger paste in the recipe is fresh and has the flavor intensity as fresh grated ginger. I hope you enjoy this recipe as much as we do! xoxo~ Ruthie

    I’m gathering BBQ ideas for a party I’m throwing tomorrow night, and this seems like a perfect addition! Quick question: How far in advance can I make the slaw? Does it get better with age? Thanks for the great recipe!

      You’ll LOVE this recipe… it’s perfect for BBQ’s. You can make the slaw a day or so ahead. The flavors will meld and I think it tastes better with age but either way it is delicious! I hope you have a fun evening 🙂 xoxo~ Ruthie

    This sounds delish, but the 1 cup of ketchup really freaks me out — that’s about 250 calories just in KETCHUP!!! Any suggestions for something a little skinnier???

      Try the reduced sugar Heinz or you can make something similar with tomato paste and Splenda.
