Alrighty alrighty! Let’s talk gym time.

The kids are in school and I am back to getting on schedule, part of that schedule includes getting to the gym on a regular basis again. 

This week we are heading to the gym for an awesome HIIT workout that revolves around a weighted ball. 
I have done a few workouts in the past using a weighted ball and it is time to revisit that piece of equipment. 
 
One of the things I love about one of the gyms I go to is the simple fact that I can always find space to get my workout done. I can go with a plan and get it done.
 
I also belong to a gym that is closer to home, I have learned to go with a very loose plan in mind and see what is actually available when I get there. I am taking this workout to the first gym, where I know I will have the space to actually achieve what I have in mind.
 
For this workout I will use a 14 lb ball. You use whatever weight is challenging and achievable.

Prep Time 10 minutes
Cook Time 8 minutes
Total Time 18 minutes

Ingredients

  • 1 cup sliced olives
  • 1/4 cup thinly sliced fresh basil leaves
  • 2 tablespoons high quality extra virgin olive oil
  • 1 teaspoons white balsamic vinegar
  • 1 baguette, 1/4 inch slices
  • 2-3 tablespoon olive oil for toasting
  • 1 (6 ounce) package creamy asiago laughing cow cheese
  • sea salt to garnish

Instructions

  1. Crostini:
  2. Preheat oven to high broil.
  3. Slice baguette into 1/4 inch thick slices, drizzle with olive oil, broil 2 minutes or until lightly browned.
  4. Repeat if necessary and set aside.
  5. Olive Tapenade:
  6. In a mixing bowl combine olives, basil leaves, 2 tablespoons olive oil, and white balsamic vinegar; toss to combine.
  7. When ready to serve- spread Creamy Asiago Laughing Cow Cheese on each crostini, top with approximately a teaspoon of olive tapenade mixture, and sprinkling of coarse sea salt.
  8. Serve and Enjoy your Basil Olive Tapenade Crostini Recipe!
