Some days homemade cookies are just what we need.   I love the whole process~ the making of the dough, wonderful aromas of baking, and THEN (drum roll, please) the first bite of a warm cookie with a tall glass of milk!  That’s what I’m talking about 🙂

Double Chip Oatmeal Cookies

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 3/4 cups butter, room temperature (1 and 1/2 sticks)
  • 2 eggs, room temperature
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 2 cups whole grain oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 cup bag milk chocolate chips
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven 350 degrees F.
  2. Coat cookie sheet with cooking spray
  3. In a stand mixer beat butter until smooth, add granulated and brown sugar , cream 3-4 minutes until light and fluffy.
  4. Add eggs one at a time, scraping with each addition.
  5. Add vanilla and mix in.
  6. Meanwhile, in a separate bowl whisk together flour, oats, baking soda, baking powder, and salt.
  7. Add dry ingredients all at once to wet ingredients; mix until 80%.
  8. Add milk chocolate chips and white chocolate chips; mix to incorporate.
  9. Drop by tablespoonfuls onto prepared cookie sheet.
  10. Bake 9 minutes or until edges are lightly browned.
  11. Remove from oven and rest on cookie sheet for 1 minute.
  12. Remove to cooling rack to completely cool.
  13. Grab a glass of milk and enjoy!

    Had to run and make these cookies last night and they turned out so good! The only problem I had was they were a bit dry and I had to mold them into balls to cook them. Did I do something wrong? They still turned out tasty!

      I’m glad that you enjoyed them… they’re tasty and yes a little bit crumbly but I really love them how they are, I suppose we could add another egg for more moisture and binding too. Hmmmmm…. next time I’ll experiment with that 🙂 Thank you for the nice comment! xoxo~ Ruthie
