I love this time of year! Spring is just an amazing awakening of beauty all around us, even though it brings on a little fit of allergies for me, I still love it 🙂

I gotta tell you–I sat out on the back deck soaking in some much needed sunshine and enjoying this delicious salad. It was fabulous in every single way.

Ingredients in Strawberry Spinach Salad w/ Lemon Vinaigrette Recipe

Salad Recipe:

  • raw spinach
  • strawberries
  • shaved or grated parmesan
  • candied pecans

Lemon Vinaigrette Recipe:

  • 4 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons honey
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon lemon zest

You’ll just have to make a batch of my Sweet and Spicy Candied Pecans – it’s the perfect way to top any salad or dessert!

Oh man… they’re just the icing on the cake, so to speak.

 Hello! Last week of school before moving into Spring Break at my house. We are all ready for some late nights, late mornings (anything after 6:30am is a late morning for my youngest) and no homework. The hardest part is that spring break doesn’t rest you up and gear you up to push through the end of the year. No. Instead it seems to do the opposite, school falls more and more to the wayside and summer break can’t seem to come soon enough.

With summer on the horizon let’s hit another workout this week. I am constantly stating the importance of a strong power house (core). Your core links all other movements together and allows for you to have balance and functionality.

Think of your core muscles as the sturdy central link in a chain connecting your upper and lower body. Whether you’re hitting a tennis ball or mopping the floor, the necessary motions either originate in your core, or move through it.

No matter where motion starts, it ripples upward and downward to adjoining links of the chain. Thus, weak or inflexible core muscles can impair how well your arms and legs function. And that saps power from many of the moves you make. Properly building up your core cranks up the power. A strong core also enhances balance and stability. Thus, it can help prevent falls and injuries during sports or other activities. I generally don’t do too much core on my lifting days, instead I focus on engaging my core throughout the lifts. Instead I have found that I enjoy putting it at the end of a running workout. 

So, let’s do some core!

Ingredients

  • 4 cups raw spinach
  • 1 cup sliced strawberries
  • 1/4 cup shaved or grated parmesan
  • 1/2 cup candied pecans
  • Lemon Vinaigrette:
  • 4 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons honey
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon lemon zest

Instructions

  1. Lemon Vinaigrette: in a small bowl whisk ingredients together until blended.
  2. Salad: in a large serving bowl place spinach, strawberries, parmesan, and pecans.
  3. Just before serving drizzle salad with Lemon Vinaigrette and Enjoy!
