Back to School Cupcakes

Jenny from NY Melrose Family is here to share a fun Back to School Cupcake with us!

The Back to School rush will be here before we know it… summer always goes way to fast around our house.

As a teacher I enjoy my Summers off and in order to get in the mood to go back I like to create a treat that makes going back easier.

Last year I made cupcakes with buttercream icing and red sugar on top to create an apple cupcake. I thought for a Back to School Cupcake this year I’d try something a bit healthier. This Back to School Cupcake is a strawberry blueberry muffin topped with my homemade Strawberry Jam.

The ingredients for this cupcake are super simple. You’ll need one box of Betty Crocker’s Wild Blueberry Muffin mix and a packet of strawberry jello. First, you need to prepare the muffin mix batter according to the directions on the box. Then simply add a packet of strawberry jello gelatin to the muffin mix. The batter will turn a gorgeous pink color. Bake the muffins according to the box and then let cool.

To create the apple look, top the semi-cooled muffin with Strawberry Jam. You don’t want the muffin to be fully cooled so that the jam melts a bit into the muffin and is easier to spread on the top. For the stem of the apple I used a pretzel stick and a spearmint candy leaf.
