Summer Sandwiches BLT

Of course you can make BLT and Cuke, Tom, Ranch sandwiches any time of year but when the tomatoes and cucumbers are on they’re extra good!  Gram loved BLT‘s (bacon, lettuce, tomato) she always had the makings for them in her kitchen.  It didn’t matter if you dropped in on her unannounced, she would offer you something to eat and 9 times out of 10 it’d be a BLT!


I have to admit that I haven’t always liked tomatoes…when I was young I quiet disliked them actually.  It’s a good thing our palates widen as we age because I really love them now!  These sandwiches are quick and so delicious… they are the main reason we’ve always grown some kind of a garden.  Gram always grew tomatoes, she had quiet a green thumb.  She grew her garden in pots on the back patio for as long as her health allowed.  My mom works with the elderly and we give her lots of tomatoes which she takes around to the people she visits. They all say they’re reminded of when they were young and grew gardens. There’s really nothing better 🙂

Grams BLT’s

2 pieces of bread- toasted
1 tsp of mayonnaise or however much you like (I use lowfat)
1 lettuce leaf
2-3 slices of tomato
salt and pepper the tomato
3 slices of bacon

Toast the bread, spread the mayo, stack the lettuce, tomato, salt and pepper, then bacon, top with the other toast and enjoy!

Cuke, Tomato, Ranch Sandwich

1 piece of high quality, whole grain bread
3 slices of cucumber, sliced long ways
2-3 slice of tomato
2 tsp Ranch dressing

This is an open faced sandwich, lay the bread on a plate, layer cucumbers, tomato and top it off with the Ranch dressing.
